It is the final week of our virtual road trip, and that means we've made it home to Maine! To celebrate our return home, Keith chose to make a classic Maine dessert: whoopie pies! There's some debate as to where whoopie pies were invented - both Pennsylvania and Maine claim them as their own. We Mainers obviously know the truth - they're from Maine! And they are such a beloved treat that Alaina's sister even had whoopie pies instead of cake at her wedding!
For this video, Keith is using a family recipe that is included below. Enjoy!
Whoopie Pies
Cream together:
6 tablespoons Crisco 1 cup sugar 1 egg 1 teaspoon vanilla Add in: 1 cup milk 2 cups of flour 1 1/2 teaspoons of baking soda 1/4 teaspoon of salt 5 tablespoons of cocoa
Drop by tablespoonful far apart on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Cool.
Make the filling - mix together: 3/4 cup Crisco 3/4 cup confectioners' sugar 6 tablespoons marshmallow crème 1 teaspoon vanilla
Sandwich filling between two cooled cookies.
