For week two of our road trip, we're visiting New York, New Jersey, Pennsylvania, Delaware, Maryland, Washington D.C., Virginia, and West Virginia. For this week's recipe, Keith decided to try making a New York cheesecake! What makes New York style cheesecake different? This version of cheesecake includes the addition of either sour cream or heavy cream, which makes the finished dessert smoother and creamier than other versions. A couple of tips:
Make sure your ingredients are at room temperature - especially the cream cheese. Keith put his in the microwave for a few seconds to soften it even more and it made a world of difference - everything mixed together smoother!
Also, keep a close eye on your cheesecake to make sure it's not getting too brown on top, but don't open the oven door and let out the heat. Our oven runs really hot - trying to plan for that, Keith checked on the cheesecake 15 minutes early and it was already too brown and overcooked. He ended up making a second one, keeping a closer eye on it, and taking it out even earlier after only 45 minutes of cooking instead of the 75 minutes listed in the recipe.
We considered a lot of other recipes before settling on New York cheesecake, including some Pennsylvania Dutch and Colonial Williamsburg-inspired dishes.
